Nancy's Recipe
"Nancy's Recipe"
Sesame Snow Peas and Asparagus Salad.
 
1 1/2 cups cooked brown rice
2 tablespoons canola oil
2 teaspoons sesame oil
3 tablespoons light soy sauce
1/2 pound snow peas, trimmed and cooked
1/2 pound fresh asparagus, trimmed and  cooked
3 tablespoons sesame seeds, toasted
3 scallions, sliced
1/4 teaspoon crushed red-pepper flakes
 
In a large serving bowl, toss the rice with the canola oil, sesame oil, and soy sauce.  Stir in the snow peas, asparagus, and sesame seeds and toss to combine.
Sprinkle with the scallions and red-pepper flakes.
 
Makes 6 servings
per serving:  239 calories, 9 g fat, 1 g saturated fat, 6 g protein, 31 g carbohydrates, 5 g dietary fiber, 0 mg cholesterol, 314 mg sodium (from the South Beach Diet Cookbook)

The only comment that I would make as a possible improvement, since I think that we can modify on one ingredient and create an even healthier mix would be to substitute olive oil for the Canola oil. That way you will improve on the oil type and get some Great Omega 9 fatty acids as well. I want to thank Nancy and our entire class of Cleanse Graduates, and encourage all of our past and present Cleansers to continue to make improvements every day. The right choices will enhance your overall Health and Wellness, and add years to you life and life to your years!
